Any good raccoon recipes?

Sure you can.

The best way to skin a raccoon is nail him up to a tree by his snout.

Start cutting at his throat %26amp; go down.

Save the hide (you can always use it later for a Daniel Boone style hat).

Save the pen!s bone too, they make great conversation pieces (no pun intented). Yes, there really is a bone!

Once he's skinned just gut him %26amp; get all his inerds out.

Wash %26amp; chop into 1'; cubes.

Coat them in flour, salt pepper %26amp; beer (the flatter the better...this is why if you work at a bar you save all the leftover beer).

Saute until brown.

Add some polk salad (picked right there in the woods).

Scramble a few quail eggs into the mixture %26amp; serve!!

YUM! YUM!

BTW If you don't kill the raccoon yourself fresh then road kill is also good as long as it has only been dead 4-6 hours.

Especially if it's summertime, then it is 1/2 cooked anyways.Any good raccoon recipes?
